In the Just Coffee program, Timorese families grow and harvest a premium organic coffee, which is then roasted by Blue Sky Coffee to produce a rich, mellow, high quality organic coffee. The coffee crops are family ventures which enable extra rice to be purchased for households, or to further educational opportunities for the children.
A coffee tree pruning project has provided growers with on-site education by agriculturalists from the Coffee Co-operative Timor. In October 2011 around 100,000 coffee plants were pruned by close to 90 families, which will see yields increased by up to 25% over the next 2 years from improved pruning. With the assistance of the Terrace Timor Network (TTN), Comunidade Edmund Rice (CER) was able to distribute over $15,000 to the growers to compensate them for lost income while participating in the pruning project. In 2011, through its association with BlueSky Coffee, TTN roasted and sold over 1 tonne of organic coffee.
